The Ice Cream Bean is a fascinating and generous fast-growing tree that offers a whimsical treat: large, fluffy, cotton-candy-like pulp straight from the pod. This nitrogen-fixing legume produces massive, twisted green pods that, when opened, reveal a sweet, white, moist pulp surrounding large seeds. The texture is airy and melting, with a delicate vanilla-cinnamon flavor, much like its name suggests. An excellent, quick shade tree that also enriches the soil and provides a unique snack.
