Tart Tamarind is the legendary sour backbone of countless global cuisines, from Indian curries and Thai soups to Mexican candies and refreshing drinks. This majestic, slow-growing evergreen legume tree produces long, brown pods filled with a sticky, tangy pulp that is both intensely sour and richly flavored. Its unique sweet-sour profile and natural thickening properties make it an irreplaceable culinary workhorse, while its graceful, spreading form provides excellent tropical shade.

Gallon refers to the size of the nursery container the plant is currently growing in (e.g. 1 Gallon, 5 Gallon, 15 Gallon).

  • A larger gallon size generally means:

    • A more established root system

    • A sturdier plant

    • Faster visual impact after planting

  • Example:

    • 5 Gallon: Ideal for residential gardens, easy to handle, good balance of value and maturity

Q: How do I use the pods?
A: Crack the brittle shell, peel it away, and you'll find the fibrous, sticky pulp wrapped around seeds. For cooking, you can simmer a chunk of the pulp-in-shell in water, then mash and strain itto create a smooth tamarind paste or "extract." The seeds are discarded.

Q: What's the difference between sour and sweet tamarind?
A: Tart/Sour Tamarind is the standard culinary type used in cooking for its sharp acidity. Sweet Tamarind is a selected cultivar with much higher sugar content, eaten fresh as a snack fruit. They come from the same species but are bred for different purposes.

Q: Can I grow it in a small garden?
A: Not recommended. It is a very large tree (40-80 ft tall with a wider spread) with deep roots. It is only suitable for large properties in tropical/subtropical climates (Zones 10-12). It cannot be container-grown long-term.
